This type of cheese is often described as a more mellow version of young Parmigiano Reggiano, possessing a full-bodied flavor that balances sharp, nutty, sweet, and fruity tasting notes. Enjoy it as a table cheese with a touch of balsamic vinegar, or grate it over a salad with bitter greens. Alternatively, serve it with salami or ‘nduja on an Italian-style charcuterie board.
