This fresh pecorino cheese is made with sheep’s milk from Agrigento in Western Sicily. Imbued with arugula, also known as rocket, and aged for a maximum of 15 days, this slightly bitter, peppery cheese has a pleasantly soft texture.

Grate this type of cheese over pasta dishes like cacio e pepe. Or try it on a cheese plate or charcuterie board alongside parmigiano reggiano and pecorino romano for a full sampling of Italian cheeses. Pairs well with prosciutto, salami, and even ‘nduja.
