Sometimes called “salame felino,” Felino salami is a slow-aged, dry-cured sausage that is flavored with the striking combination of peppercorns and Chianti wine. Felino, a small salami named after a town of the same name, is made from an ancient recipe from Italy.
Volpi recommends slicing this pure pork salami into thick cuts and pairing it with country-style crusty bread, Parmigiano Reggiano cheese from the province of Parma, and a red wine. You can also enjoy this salami felino with dry white wine on a charcuterie board with fresh fruit and smoky Gouda cheese. Or try it, sliced thin, on a deli-style sandwich.
